DÉGUSTATION
Colour : Deep ruby Nose : Raspberry, cocoa and Mediterranean herbs. Palate : Red fruits, round and supple supported by delicate fine grained tannins. Long with a fresh mineral finish.
VINIFICATION
Harvest by hand and brought directly to the winery. Destemmed, lightly crushed then fermented in concrete tanks between 3 to 5 weeks with gentle cap management.
ACCORDS VINS & METS
Game birds (pigeon, partridge, duck…) – slow cooked leg of lamb or simply a grilled T-bone steak.
ÉLEVAGE
16 months in concrete tanks on fine lees.
