DÉGUSTATION
Colour : Ruby Nose : Framboise, rose, cacao et garigues Bouche : Bouche ronde, tanins suaves, long en bouche avec une fin en fraicheur et minéralité. Beaucoup de finesse.
VINIFICATION
Hand picked then immediately transportes and sorted at the winery. Destemmed, lightly crushed then fermented in cement tank for 3 weeks with gentle and regular pump overs.
ACCORDS VINS & METS
Grilled and barbequed meats, duck, pigeon, lamb tagine, Italian cuisine (ossobucco, saltimbacca, pasta ragu…), Moroccan cuisine (lamb and prune tajine).
ÉLEVAGE
16 months in cement tank on fine lees.
